The mexican version of the grilled cheese sandwich is one delicious, crispy, cheesy invention that is a sure crowd-pleaser. Here is a great recipe for a basic chicken quesadilla. If you have never had a quesadilla with these ingredients then you ar ein for a surprise. The red onion, mushrooms and tomatoes add new flavors and textures to the cheese and chicken.
Awesome Chicken Quesadillas
Serves 2
1/2 lb. of Chicken Breasts
1 tsp. of Cumin
1 tsp. of Chili Powder
1 tsp. of Oregano
1 tsp. of Garlic Salt
1/2 C. of Cheddar Cheese, shredded
1/2 C. of Monterey Jack, shredded
1/3 C. of Red Onion, diced
1/3 C. of Portabello Mushrooms, sliced and sauteed
1 Tbl. of Tomatoes, diced
2 large Flour Tortillas
Butter
- Sprinkle cumin, chili powder, garlic salt and oregano on chicken breasts
- Cook chicken breasts in a frying pan with 1 Tbl of Olive Oil until thoroughly cooked
- Cut cooked chicken into 1/2-inch cubes
- Place 1/2 Tbl of butter in a frying pan and allow to melt
- Place flour tortilla in pan and move it around to make sure the bottom side is completely coated
- Sprinkle the cheeses all around the top side of the tortilla
- Sprinkle diced chicken, onions, mushrooms, tomatoes on top of cheese
- When tortilla becomes crispy (not burnt), fold in half
- Remove from pan and slice it into triangles
- Serve with a dollop of sour cream and enjoy
