Sweet Potato Fries

I will admit that I haven't perfected this recipe in terms of the texture but the flavor is there. This recipe is a great example of the intersection of tangy, sweet, and smoky.

Sweet Potato Fries
Serves 4

4 Sweet Potatoes, peeled and cut into equal-sized fries
1 Tbl. of Cumin
1 Tbl. of Chili Powder
1/2 Tbl. of Garlic Powder
1/2 Tbl. of Onion Powder
1/2 Tbl. of Cayenne Pepper (or Paprika)
1 Tbl. of Oregano
Salt to taste
Canola Oil

- Preheat oven to 400 degrees
- Mix all herbs and spices together in small bowl
- Sprinkle mixture over sweet potato fries
- Place seasoned fries on greased cookie sheet
- Bake for 15 to 20 minutes or until crispy...cross your fingers
- Surprisingly good served with ketchup (Note: I can imagine it will be good with a good horseradish cream too. Never tried it though)
