This is a great variation on the typical mash. It uses a traditional mashed potato recipe and adds a little twist of TangySweetFoodLove.
Cilantro-Infused Mashed Potatoes
Serves 10
Mashed Potato "Base"
1 5-Lb. bag of Russet Potatoes, peeled and quartered
2 C. of Whole Milk
1 C. of Sour Cream
3 Tbl. of Butter
Salt, to taste
- Boil potatoes in large pot of salted boiling water until fork tender
- Drain potatoes from water and place in large bowl for mashing
- Add milk, sour cream, butter, and salt
- Using a masher, mash all ingredients together until desired consistency
Cilantro Infusion
1/2 bunch of fresh Cilantro
2 Garlic Cloves
2 stalks of Green Onions
1/4 C. of roasted Pumpkin Seeds
Olive oil, enough to emulsify
Salt, to taste
- In a blender, place all ingredients in except salt and olive oil
- Blend ingredients and slowly pour in olive oil to emulsify
- Add salt to taste at end
- Swirl this mixture into mashed potato "base" after mashed potatoes are in the desired serving dish
