My First Victory!!!!

I forgot to publish my first cooking competition win. After failing many times to make women cry...through my cooking, I finally triumphed! It was a salsa competition and my mango salsa took first prize by a long shot. I posted the recipe in an earlier post (here) but you can see the recipe below.

Mango Salsa
Serves 10 (as an appetizer)

3-4 Mangoes, peeled and diced
1 medium Purple Onion, chopped
1 medium Green Bell Pepper, chopped
1 medium Tomato, diced
1/2 medium Cucumber, peeled and diced
1 Tbl. of Garlic, minced
1 tsp. of Jalapeno, seeded and minced
5 Tbl. of Cilantro, chopped
Juice of 3 to 5 limes
Dash of Cumin
Dash of Chili Powder
Salt to taste
Sugar, if needed to balance the acid of the lime juice

- Mix all ingredients together in a large bowl
- Refrigerate overnight if possible

Suggested Uses:
- Serve with tortilla chips as a dip
- Serve atop black bean burgers like my co-worker, Tracy
- Serve atop grilled foods like fish and chicken
